Steel-cut Oat Bread

Ingredients

  • 1 cup steel-cut oats
  • 1/4 cup dark molasses
  • 1 tablespoon softened shortening or oil
  • 3/4 teaspoon salt
  • 2 cups boiling water
  • 2 cups sifted whole wheat flour
  • 1 tablespoon yeast
  • 1/4 cup warm water
  • 2 cups more flour

Directions

Measure oats, molasses, oil, and salt into a mixing bowl. Pour 2 cups of boiling water over the mixture. Stir in 2 cups sifted whole wheat flour and cool.
Dissolve the yeast in the warm water and add to the above mixture. Work in 2 more cups of flour and knead.
Rise once in the bowl and once in the pan.
Bake at 375 degrees for 40 minutes.
