Corn Chowder

Ingredients
- 1/2 cup chopped salt pork or bacon
- 3-4 tablespoons chopped onion
- 1/2 cup chopped celery
- 3 tablespoons chopped green pepper
- 1 cup diced raw potatoes
- 2 cups water
- 1/2 teaspoon salt
- 1/4 teaspoon paprika
- 1/2 bay leaf
- 3 tablespoons flour
- 1/2 cup milk
- 1 1/2 cups hot milk
- 2 cups whole kernel corn
- chopped parsley
Directions
Saute the bacon or salt pork slowly until lightly browned.
Add and saute the onion, celery, green pepper until golden brown.
Add the potatoes, water, salt, paprika and bay leaf and simmer. When the potatoes are tender, about 45 minutes, combine the flour and 1/2 cup milk until blended and bring to the boiling point; add to the rest of the mixture in the pot. Heat about 5 minutes and add the 1 1/2 cups hot milk and the corn. Reheat but do not boil. Serve sprinkled with parsley.
