Stuffed Mushrooms

Ingredients

  • 32 Large Mushrooms (about 2 pounds)
  • 2 cloves garlic, crushed
  • 1/4 cup butter
  • 8 ounces bulk pork sausage
  • 1/2 cup seasoned dry bread crumbs
  • 1/2 cup grated parmesan cheese
  • 1/4 cup snipped fresh parsley
  • salt
  • pepper
  • melted butter

Directions

1. Remove stems from mushrooms. Chop stems and reserve caps. Saute chopped mushroom stems and the garlic in 1/4 cup butter in small akillet over medium heat until mushrooms are golden, about 3 minutes. Add sausage; saute stirring occassionally, until brown. Stir in bread crumbs, cheese and parsley. Taste and adjust seasonings. Stuff each reserved mushroom cap with about 1 tablespoon of sausage mixture. 2. Heat oven to 550 degrees and/or broil. Brush each stuffed mushroom with melted butter. Broil 4" from the heat until bubbly and brown, about 3 minutes.
