Kidney Creole

Ingredients
- 1 beef, pork or lamb kidney
- 1 tablespoon wheat germ or whole wheat flour
- 2 tablespoons powdered milk
- 1 chopped onion
- 1 diced pimento or green pepper
- 1 clove minced garlic
- 1 stalk chopped celery
- 1 cup tomato puree
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 pinch basil
- 1 pinch savory
- 1 pinch thyme
Directions
Dice kidneys into 3/4" cubes and mix well with the vinegar. Shake with the wheat germ and powdered milk Sear the kidneys approximately 3 minutes in oil. Drain Saute 5 minutes in the same pan: the onion, pepper, garlic and celery Add the tomatoes. salt and spices Simmer 10 minutes and then add the kidneys and reheat. This was once Johnny's favorite food.
