London Meatloaf

Ingredients

  • 1 pound lean ground beef
  • 1 cup sourdough bread crumbs
  • 1/2 cup rice
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 1/2 cup chopped green or red pepper
  • 1 clove minced garlic
  • 2 beaten eggwhites
  • 3 ounces tomato paste
  • 1/4 cup finely chopped parsley
  • 1 tablespoon basil or marjoram
  • 1 1/2 teaspoons thyme
  • 1 1/2 teaspoons oregano
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon pepper
  • 1/8 teaspoon cayenne pepper

Directions

Place all the ingredients in a large mixing bowl. Using both hands or a large spoon, mix the ingredients thoroughly until well blended. On a large nonstick pan, mold the mixture to form a rounded oblong loaf, or use a nonstick loaf pan. Cover with foil and bake 325 for 1 1/4 hours. Serve with spicy tomato sauce.
