Giant White Beans with Pork Fat

Ingredients

  • 1 lb dried giant white beans (I used Rancho Gordo Royal Corona Beans)ns
  • 2 small chunks pork fat trimmed from a pork shoulder
  • 1 Shallot, sliced
  • 2 Bay leaves
  • 2 sprigs Thyme
  • 2 Cloves Finely smashed garlic

Directions

Soak beans overnight in salted water. Drain and add to a crockpot. Cover with plenty of water, and add everything but the garlic. Add some salt and pepper. You could probably use salt pork instead of the pork fat.

Let it cook all day until the beans are insanely tender and the pork fat falls apart. Add the garlic, a splash of vinegar, and salt and pepper to taste.

Goes great with sliced smoked pork shoulder and collard greens
