Butter Chicken (Tikka Masala / Tikka Makhani)

Ingredients

  • 2 lb chicken thigh and/or breast, cubed
  • 2 onions, diced
  • 1 inch ginger, peeled and minced
  • 1 bulb garlic, minced
  • 1.5 tsp Coriander seeds, ground
  • 2 tsp cinnamon
  • 1.5 tsp cumin
  • 2 tbsp chili powder
  • 1.5 tbsp garam masala
  • 1 15-oz can each tomato sauce and diced tomatoes
  • 1 cup yogurt
  • 1 cup heavy cream (optional)
  • cilantro, chopped

Directions

Sprinkle salt and ground coriander on chicken, and saute until cooked through. Remove from pan and set aside.

Saute onions until translucent, then add garlic, ginger, and spices, and fry for a minute or two. (Be careful not to burn the spices.) Add tomato sauce and diced tomatoes, and mix thoroughly. Add chicken, yogurt, and heavy cream (if desired), and simmer for 10 minutes. Top with cilantro if desired.
