Ingredients
- 1 head Minced garlic
- 1 diced Large onion
- 1/2 lb Spinach
- 1 14 oz. Canned Diced Tomato (or 2-3 fresh diced tomato)
- 5-7 Capers
- 5 or so leaves Fresh Basil
- Salt
- Oregano
- Freshly Cracked Black Pepper
- Cayenne Powder/Red Pepper Flakes
- about 2-3 tbsp Olive oil
Directions
1. Heat up olive oil for about 30 or so seconds on high
2. Put in onions
3. Turn the heat down to medium-high and sauté for 5-ish minutes
4. Put in the garlic and sauté for about a minute.
5. Put in the tomatoes, capers and basil, then add in the salt, pepper, oregano and cayenne. (I usually just eyeball it to whatever looks good.)
6. Put in the basil, and stir it around until the spinach volume decreases majorly.
7. Enjoy with Mac & Cheese or just about anything else, really.
Note
I swear this is like the tastiest substance known to science. Originally meant to go with mac & cheese, but can go with anything really.
