Coconut Milk Ice Cream

Ingredients
- 2 coconut milk
- 1 teaspoon vanilla
- 1/4 teaspoon xanthan or guar gum
- 3/4 cup sugar
- Add-ins:
- 1/4 cup cocoa
- 1/4 cup instant coffee (must add 1/4 cup more sugar
- 1/2 - 1 cup fruit - peaches are best
- 1/2 cup coconut
- 1/2 + cup chocolate chips
Directions
Mix in blender and add to ice cream maker. Add the coconut and chips at the end.
Note
need an ice cream maker
