Green Mole Sauce

Ingredients

  • 1 medium chopped onion
  • 3 crushed garlic cloves
  • 1 cup chicken broth
  • 1 can (4oz) drained, rinsed green chilis
  • 1/3 cup packed fresh cilantro
  • 1/3 cup packed fresh parsley leaves
  • 1/4 cup sunflower seeds
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne
  • 1 tablespoon lime juice

Directions

This recipe is for pork tenderloin and rice and corn with red and green peppers.

Cook the onions and garlic over medium heat for 4 minutes. Put in a food processor with everything else except the lime. Process
Simmer on low for 15 minutes until slightly thickened. Add the lime juice.

Serve with the sauce poured over the tenderloin, rice and vegetables.
