Michael's Thai Coconut Curry Hummus

Ingredients

  • 2 cans chickpeas, drained
  • 3 tablespoons lemon juice
  • 2 tablespoon lime juice
  • 7 ounces coconut milk
  • 1/3 cup peanut butter
  • 1/4 cup olive oil
  • 1/3 cup dried coconut (sweetened or unsweetened
  • 2 teaspoons crushed red pepper (or more to taste)
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 2 teaspoon curry powder

Directions

Combine all ingredients in a food processor. Blend until smooth. Devour with corn chips.
