Pecan-crusted chicken fingers

Ingredients

  • 1/2 pound chicken tenders or breasts cut to tender size also work
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 large eggs, lightly beaten
  • 1/4 cup finely chopped pecans
  • 1/4 cup almond flour
  • 1/2 tablespoon olive oil

Directions

Preheat oven to 400 degrees

Sprinkle chicken with garlic powder, salt, and pepper.

Place eggs in a shallow dish.

Combine pecans and almond flour in another shallow dish.

Dip chicken in egg; dredge in pecan mixture.

Place a wire rack on a large baking sheet and rub with oil. Or spray

Arrange chicken on rack; bake for 20 minutes or until done and lightly browned.
