Cherry Ice Cream Pie

Ingredients
- 3 egg whites
- 1/2 teaspoon cream of tartar
- 3/4 cup sugar
- 3 tablespoons cocoa
- 1 9" baked pie shell
- 1 16 oz. can sweet cherries
- 1 tablespoon sugar
- 1 tablespoon cornstarch
- 3/4 teaspoon rum extract
- 1 quart vanilla ice cream
Directions
Beat egg whites and cream of tartar until foamy. Beat in 3/4 cup sugar, 1 tbsp at a time. Beat until stiff and glossy Fold cocoa into meringue. Spread evenly in baked pie shell, sealing edges. Bake 25 minutes. (meringue will be soft) Cool thoroughly Drain cherries. Reserve 1/2 cup syrup Mix 1 tbsp sugar and cornstarch in saucepan. Stir in reserved syrup . Heat to boiling, stirring constantly. Remove from heat Cool. Stir in rum extract and cherries. Scoop ice cream into meringue. Top with cherry mix. Serve immediately
