Crunchy Lemon Squares

Ingredients

  • 1 cup quick oats
  • 1 cup flour
  • 1/2 cup flaked coconut
  • 1/2 cup coarsely chopped pecans
  • 1/2 cup firmly packed light brown sugar
  • 1 teaspoon baking powder
  • 1/2 cup melted butter
  • 1 can Eaglebrand
  • 1/2 cup lemon juice
  • 1 tablespoon grated lemon rind

Directions

Preheat oven to 350 degrees (325 degrees for glass dish) In medium bowl: combine oats, flour, coconut, nuts, sugar, baking powder and butter. Stir to form a crumbly mixture. Set aside. In medium bowl combine Eagle Brand, lemon juice and rind. Pat half of crumb mixture evenly on bottom of 9 x 9 " pan. Spread sweetened condensed milk mixture on top and sprinkle with remaining crumbs. Bake 25 - 30 ' - lightly browned. Cool thoroughly before cutting. Makes 9 servings.
