Ingredients

  • APPLES
  • 4 cups 1" apple slices
  • 3 cups cold water
  • 1/4 cup honey
  • 1 potato starch in 1 tbsp cold apple mix
  • APRICOT
  • 1 1/2 cups dried apricots (1/2 lb)
  • 4 1/2 cups water
  • 2 tablespoons honey
  • 1 tablespoon potato starch in cold liquid
  • STRAWBERRY
  • 2 1/2 pints fresh strawberries
  • 2 cups cold water
  • 3/8 cup honey
  • 1 tablespoon potato starch in cold liquid
  • CRANBERRY
  • 3 cups uncooked whole cranberries
  • 2 cups cold water
  • 3/8 cup honey
  • 1 tablespoon potato starch in cold liquid
  • RHUBARB
  • 1 1/2 pounds rhubarb in 2" lengths
  • 3 cups cold water
  • 3/8 cup honey
  • 1 tablespoon potato starch in cold liquid

Directions

Bring fruit to a boil over high heat, reduce heat and simmer uncovered 10 - 15 minutes, until tender. Rub fruit through fine sieve. Star in honey and bring to boil. Stir in starch and cook 2 - 3" stirring constantly until thickened. Cool to lukewarm and pour into dishes. Refrigerate 4 hours.
