Fresh Coriander Chutney

Ingredients

  • 1/4 cup fresh lemon juice
  • 1/4 cup water
  • 1/4 pound (about 2 cups packed) fresh coriander (cilantro) leaves and stems chopped
  • 1/4 cup peeled, finely chopped fresh coconut
  • 1/4 cup finely chopped onion
  • 2 tablespoons scraped, finely chopped fresh ginger root
  • 2 teaspoons chopped fresh hot red or green chilis
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Directions

Puree in electric blender: the lemon juice, water and 1/2 cup coriander. Scrape down sides of blender and add 1/2 cup more coriander. Puree, 1/2 cup at a time.
Add coconut, onions, ginger, chili, sugar, salt and pepper. Blend. Taste and add more sugar or salt if needed.

Serve immediately - if not used at once, cover and refrigerate. Will keep a week.
