Zucchini Pickles

Ingredients

  • 5 pints strips of zucchini
  • 6 or so cut up onions
  • 1/2 cup salt
  • 1 quart vinegar
  • 1 1/4 cups honey
  • 2 teaspoons celery seeds
  • 2 teaspoons mustard seeds
  • 2 teaspoons ground ginger
  • 1/4 teaspoon turmeric

Directions

Cut the zucchini into 5 pints of strips and cut the onions into slices or whatever you want. Combine the zucchini and onion in layers; sprinkle layers with the salt. Cover. Stand 15 minutes. Meanwhile: combine honey, vinegar, and spices and have scalding hot. Drain off the salt brine; Add it to the vinegar and reheat to scalding hot. Pack in jars. Pour solution over zucchini and seal. Process 10 minutes in boiling water bath.
