Stewed Green Beans

Ingredients

  • 1 small finely chopped onion
  • 1/4 cup butter (or use olive oil)
  • 1 pound green beans(fresh - adapt for frozen)
  • 1 minced garlic clove
  • 1 teaspoon fresh mint leaves (1/2 teaspoon dried)
  • 1 tablespoon minced parsley
  • 1 teaspoon fennel seeds
  • 1/2 cup tomato sauce
  • 1/4 cup water
  • salt and pepper to taste

Directions

Saute the onion in butter or oil until golden brown. Wash and trim the beans. Cut into 2 inch lengths. Add to onions and saute, stirring constantly, until the beans have turned bright green. Add remaining ingredients and simmer for 30 minutes, or until beans are tender.
Makes 4-6 servings.

I made this with frozen wax beans. If they are thawed, it works just fine.

Note

A nice change and Greek to boot.
