Buckwheat Bread

Ingredients
- 1 1/2 teaspoons dry yeast
- 1 3/4 cup warm water
- 2 tablespoons raw sugar
- 3 tablespoons milk powder
- 1 teaspoon salt
- 1 1/2 cups buckwheat flour
- 3 -3 1/2 cups whole wheat flour
Directions
Grease one large loaf pan (9x5x2 3/4).
Sprinkle the yeast over the water in a lare mixing bowl. Allow the yeast to dissolve, about 5-7 minutes. Stir in the sugar, salt, milk powder, and the buckwheat flour. Slowly add the wheat flour until the dough stiffens and pulls away from the side of the bowl.
Turn the dough out on a floured board and knead until it feels elastic, about 5-7 minutes.
Shape the dough and place it in the greased pan. Cover it with a clean dish cloth and set in a warm place to rise until about double in bulk.
Preheat the oven to 350 degrees.
Bake for 50-60 minutes or until done.
Note
Interesting flavor. Good with a dinner soup.
