Carrot Cake

Ingredients

  • 2 teaspoons baking powder
  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 1/2 cups oil
  • 2 cups sugar
  • 4 eggs
  • 3 cups grated carrots
  • 1/2 cup chopped nuts
  • 1 teaspoon salt

Directions

Sift the dry ingredients. Add the remaining ingredients and mix. Bake 1 hour and 15 minutes at 300 degrees. Use angel food pan. loaf pan or 13 x 9 x 2 pan Freezes well. Ice with cream cheese frosting: 1/2 cup butter 8 oz. cream cheese add icing sugar to taste - about 1 cup and a little milk for good consistency. Maybe a little vanilla would taste good.
