An Excellent Version of French Dressing

Added by Fillylourecipes Source: Craig Craiborne's Kitchen Primer

Ingredients

  • 1/2 clove garlic
  • salt
  • 1/2 - 1 tablespoon wine vinegar
  • 1/2 teaspoon prepared mustard, Dusseldorf or Dijon, not ballpark please.
  • 2 drops Tabasco sauce
  • 3 tablespoons olive, canola or a combination of the two

Directions

Chop the garlic with the salt until it is almost a paste and add it to a salad bowl or mixing bowl.
Stir in the remaining ingredients. using a wire whisk, until well blended.
I have always used a mortar and pestle to make this dressing. The salt and the garlic grind up together perfectly.
Yield: about 1/4 cup, enough for a salad for two.

Note

This was our standby for many years
