Nanaimo Bars

Ingredients

  • 1/2 cup butter (125 ml)
  • 1/4 cup white sugar (50 ml)
  • 5 tablespoons unsweetened cocoa (75 ml)
  • 1 slightly beaten egg
  • 1 teaspoon vanilla (5ml)
  • 2 cups graham wafer crumbs (500ml)
  • 1 cup unsweetened coconut (250 ml)
  • 1/2 cup chopped walnuts (125 ml)
  • 2 cups icing sugar (500ml)
  • 1/4 cup soft butter (50ml)
  • 2 tablespoons milk (30ml)
  • 2 tablespoons custard powder (30ml)
  • 3 semisweet chocolate (85g.)
  • 1 tablespoon butter (15ml)

Directions

Base:
1. In top of double boiler, melt butter with sugar and cocoa
2. Add egg and rest of base ingredients. (egg, vanilla, crumbs, coconut, walnuts)
3.Press into 9 inch (23 cm) square pan

Filling:
1. Mix ingredients until smooth with electric mixer (sugar, butter, milk, custard powder).
2. Chill 1/2 hour.

Chocolate Glaze:
1. Melt chocolate and butter in top of double boiler.
2. Spread over filling.
Cut into small bars when cooled.

The custard powder comes in cans and can be bought places like Jungle Jim's or on the web and in a variety of grocery stores. Just keep a look out for it and buy when you see it.

This recipe takes a little time and is incredibly rich and totally worth the work.
