Heidi's non-dairy muffins

Ingredients

  • DRY:
  • 1 cup brown flax seed pulverized
  • 1/2 cup nut meal
  • 3/4 cup protein powder (whey is best)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1-2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice (or mix up your own)
  • 1/2
  • WET:
  • 4 eggs if not dairy-free use: 2 eggs and 2/3 cup cottage cheese
  • 2 tablespoons butter or oil
  • 1 teaspoon vanilla
  • 1 can pureed pumpkin OR
  • 1 cup grated zucchini etc. whatever vegie you like
  • 1 cup dried fruit (chopped apricots, raisins, etc.)
  • 1 cup chocolate chips

Directions

Mix up the dry ingredients.
Mix up the wet ingredients, and if you are using cottage cheese mix until the curds disappear.
Add vegetable:pumpkin or zucchini recommended, but whatever you like.
Add dried fruit, and chocolate chips.

Bake in muffin tins - grease well or use parchment muffin papers - don't use the cheap papers. They don't work well.
Bake at 350 for about 30 minutes

They freeze well.
