Chocolate Pie

Ingredients

  • 2-4 ounces unsweetened chocolate
  • 1 cup powdered sugar
  • 3 large eggs
  • 1/2 cup butter
  • 1 teaspoon vanilla
  • 1 9 inch baked pie shell
  • whipped cream

Directions

Serves 8. Melt chocolate in double boiler over hot water. Cool. Cream sugar and butter until light and fluffy (5 - 10 minutes) Beat in melted chocolate and vanilla. Add eggs, one at a time, beating at high speed after each addition. Spoon into 9" baked pie shell and refrigerate 2-3 hours. Top with whipped cream. The more you beat it the lighter and fluffier it will be. Regular granulated sugar can be used but unless well beaten, it may cause the pie to taste grainy.
