Roast Chicken

Ingredients
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 small white onions
- 1 small clove garlic
- 1 sprig parsley
- 1/2 bay leaf
- 1/4 teaspoon or 1 sprig thyme
- 4 tablespoons butter
- 1/2 cup water
- 1 3 pound chicken
Directions
1. Sprinkle chicken inside and out - salt and pepper 2. Inside: 1 onion, garlic, parsley, bay leaf, and thyme. 3. Truss 4. Heat butter and roll chicken in it. 5. Put in preheated 450 degree oven on side: 15 minutes. BASTE 6. BASTE every 5 minutes. 7. Turn to other side for 15 minutes. 8. Turn on back 15 minutes. Cook 45 - 1 hour total, in a 450 degrees oven. Make gravy or add water to drippings.
