Wild Rice Stuffing
Ingredients
- salt and pepper
- 1/2 teaspoon dried sage
- 1 cup uncooked wild rice
- 1 cup uncooked jasmine or other long-grain white rice (I used short-grain brown rice)
- 1/2 pound pork sausage meat (I used homemade turkey sausage)
- 1/2 large sweet yellow onion diced small
- 1 stalk celery diced small
- 2 tablespoons butter
Directions
1. Rinse the wild rice. Combine rice and 2 1/4 cups water in a large saucepan. Simmer uncovered until the rice is tender and the water is absorbed. About 45 minutes. Set aside to cool. This can be done ahead.
2. Cook the jasmine rice, using 2 cups of water and cover to cook. Takes 25-45 minutes, depending on the rice you use.
3. While the rice is cooking, melt butter in a skillet over medium-low heat. Saute crumbled sausage, onion, and celery for about 15 minutes. Add sage, salt and pepper, and cook an additional 5 minutes. Set aside.
4. Toss wild and white rice with sausage mixture. Use to stuff turkey. You can reheat excess stuffing in a covered casserole dish for about 15 minutes (or microwave), or freeze it in 2-cup portions for later use stuffing chicken or game fowl. It is tasty eaten like a regular rice dish, too.
