Quinoa tabouli

Ingredients

  • 2 cups water
  • 1 cup quinoa
  • 3 medium ripe tomatoes
  • 1 1/2 cups parsley
  • 1 cup scallions
  • 1/2 cup fresh lemon juice
  • 1/3 cup safflower or olive oil
  • 2 tablespoons fresh mint
  • salt to taste

Directions

Rinse quinoa in running water. Cook rinsed quinoa in water. Bring to a boil and simmer covered for 10 to 15 minutes.

While the quinoa is cooking, finely chop the tomatoes, parsley and scallions. Add lemon juice, oil, and mint to tomato mixture. Stir in cooked quinoa and salt. Mix well. Allow to sit in the refrigerator for a day to blend flavors, if possible.

Quinoa is traditionally served at room temperature.

If you have no fresh mint, 1 teaspoon of dried mint can be substituted, but it won't work quite as well. Ah, well.
