Thai Black Bean Yumminess

Ingredients
- 1/2 onion diced
- 1 TBSP ginger, finely chopped
- 4 cloves garlic, pressed
- 1 red pepper chopped to 1 inch squares
- 1 green pepper chopped to 1 inch squares
- 2-3 kaffir (lime) leaves finely chopped
- 2 cups cooked black beans
- 1 TBSP lime juice
- 1/2 cup coconut
- 2 TBSP curry powder
- 1 can chopped tomatoes (drained)
- 1 handful cilantro (chopped)
- 2 cups brown rice
Directions
Stir fry the onion, garlic and ginger. Add and red and green peppers and stir fry a few more minutes, add the rest of the ingredients except cilantro and stir until mixed thoroughly. Let the flavors of the spices come out by leaving it on low for a few minutes, add cilantro and serve over brown rice. Yum!
