Thai Black Bean Yumminess

Ingredients

  • 1/2 onion diced
  • 1 TBSP ginger, finely chopped
  • 4 cloves garlic, pressed
  • 1 red pepper chopped to 1 inch squares
  • 1 green pepper chopped to 1 inch squares
  • 2-3 kaffir (lime) leaves finely chopped
  • 2 cups cooked black beans
  • 1 TBSP lime juice
  • 1/2 cup coconut
  • 2 TBSP curry powder
  • 1 can chopped tomatoes (drained)
  • 1 handful cilantro (chopped)
  • 2 cups brown rice

Directions

Stir fry the onion, garlic and ginger. Add and red and green peppers and stir fry a few more minutes, add the rest of the ingredients except cilantro and stir until mixed thoroughly. Let the flavors of the spices come out by leaving it on low for a few minutes, add cilantro and serve over brown rice. Yum!
