Spicy Tomato Sauce

Ingredients

  • 4 tablespoons oil
  • 2 chopped onions
  • 4 cloves crushed garlic
  • 4 tablespoons chopped basil
  • 3 tablespoons chopped oregano
  • 1/2 cup chopped parsley
  • 1 bay leaf
  • 6 cups canned tomatoes
  • 1 13 ounce can tomato paste
  • salt
  • pepper

Directions

Heat oil. Saute onions and garlic until translucent, then add basil, oregano, parsley and bay leaf. Cook for 2 minutes. Add tomatoes, tomato paste and salt and pepper, bring to a boil, then simmer for at least 1 hour. Makes 8 cups. It is hard to tell from this recipe whether the spices are fresh or dried. I used fresh basil and dried oregano. Maybe they should have all been fresh or dried. Who knows?
