Salami

Ingredients

  • 5 pounds hamburger
  • 1/4 teaspoon ascorbic acid crystals
  • 4 tablespoons Morton Tender Quick
  • 3 or less tablespoons pepper
  • 1/2 teaspoon peppercorns, crushed
  • 1 1/2 teaspoons garlic salt
  • 2 1/2 teaspoons hickory smoked salt
  • 2 teaspoons mustard seeds

Directions

Mix and refrigerate 24 hours, Remix and refrigerate another 24 hours. Mix and make into six rolls, each 1 foot long. Bake on broiler pan (rack) for 8 - 9 hours at 150 degrees. Do not cover.
