Ripe Cucumber Pickles

Ingredients

  • 4 quarts cucumbers prepared for canning
  • 2 cups cider vinegar
  • 2 cups sugar
  • 1 tablespoon turmeric
  • 1 stick cinnamon
  • 1 teaspoon salt

Directions

To prepare the cukes: peel, clean out seeds and cube Cook the cucumbers, vinegar and sugar until amber (very light shade) Add the turmeric, cinnamon and salt. Simmer until juice thickens a little, then pack hot.
