Basic Tomato Sauce

Ingredients

  • 1 large chopped onion
  • 1 clove chopped garlic
  • 2 tablespoons oil
  • 2 pound can or fresh equivalent tomatoes
  • 3 tablespoons tomato paste
  • 1 teaspoon dried basil
  • 1/2 teaspoon sugar
  • salt
  • pepper

Directions

Saute onion in oil, add garlic, saute 1 minutes. Stir in tomatoes and juice - break up. Add tomato paste, basil, sugar, pinch, salt and pepper. Simmer 30 - 40" until thick. Strain through a fine sieve - check seasoning. Makes 1 pint - will keep tightly covered for weeks.
