Rice and Black Bean Meal

Ingredients
- 3/4 cup brown rice
- 1 10 oz. package frozen corn
- 1 15 oz. can black beans, drained and rinsed
- 1/2 cup green pepper, chopped
- 1/4 teaspoon salt
- 1/2 cup salsa
- 1/4 cup light sour cream
- 1/2 cup cheddar cheese, low fat
Directions
Cook rice, adding corn to rice during the last five minutes of cooking;cool. Mix rice, corn, black beans, green pepper and salt in a a large serving bowl. Top each serving with 2 tablespoon salsa, 1 teaspoon sour cream and 2 tablespoons shredded cheese. Serves 4 Amy says leave out sour cream and cheese, I would try it first.
