Tofu and Snowpea Soup

Ingredients

  • 4 cups chicken broth
  • 1 4 ounce cake cubed tofu
  • 1/4 cup thinly sliced mushrooms
  • 1/4 cup minced green onions
  • 1/4 cup finely chopped carrot
  • 1 large clove garlic
  • 1 teaspoon minced fresh ginger
  • 1 pinch anise
  • soy or tamari sauce
  • 1 cup fresh snow peas

Directions

Place all ingredients except the snow peas in a large pot. Bring to a boil, lower heat and simmer, covered for 20 minutes or until the vegetables are tender. Add the snow peas and coo until just tender. Garnish with additional choppedgreen onions, if desired. Makes 4 cups 40 calories/cup
