Black Beans with Tomatoes

Ingredients

  • 1 teaspoon oil
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1 14 oz. can tomatoes, drained, chopped
  • 1 15 oz. can black beans, drained
  • 1/2 teaspoon tobasco sauce
  • 1 teaspoon cilantro

Directions

Heat oil in medium skillet over moderately high heat; add onions and garlic. Saute, stirring until onion is browned, about 2 -3 minutes. Add tomatoes and cook, stirring frequently, for 2 more minutes. Add black beans and tabasco sauce; stir. Cover skillet and cook until beans are heated through, about 2 minutes. Remove from the heat and sitr in cilantro. Serve immediately. Serves 4. Variations: Black-eyed peas. pinto, navy, or kidney beans may be used instead of black beans. Chopped fresh coriander (1 tablespoon) may be used instead of cilantro. Use 2 cups of fresh tomatoes when in season. Cajun hot sauce m;ay be substituted for tabasco sauce.
