Wholewheat Pancakes

Ingredients

  • 2 1/2 cups whole wheat flour
  • 1/2 cup oil
  • 3 eggs
  • 2 cups milk
  • 1/4 cup honey
  • 5 teaspoons baking powder
  • 2 teaspoons ground coriander
  • 1 teaspoon grated nutmeg
  • 1/4 teaspoon salt

Directions

Mix in order given and combine well. Grease griddle. Can add while first side is cooking: Blueberries, dates, nuts, etc. When bubbles appear and remain, turn and cook other side. Also makes good waffles. May be frozen.
