Wholegrain Banana Blueberry Pancakes

Ingredients

  • 1 banana, very ripe
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 1/4 cup milk
  • 2 tablespoons sugar
  • 1/4 cup melted butter or oil
  • 1 teaspoon zest of lemon
  • 1/2 teaspoon nutmeg
  • 1 1/3 cups whole wheat flour
  • 1/3 cup cornmeal
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup blueberries

Directions

In a large mixing bowl, mash the banana and buttermilk together with a potato masher. Whisk in the eggs, followed by the milk, sugar, butter or oil, lemon zest, and nutmeg.
