Buckwheat Cakes

Ingredients

  • 2 cups warm water
  • 1 tablespoon yeast
  • 2 tablespoon brown sugar
  • 2 cups buckwheat flour
  • 1 cup unbleached flour
  • 1 cup warmed milk
  • 1 teaspoon salt

Directions

Mix water, and brown sugar and dissove the yeast in it. Sift and add the flours to the yeast mixtrure. Add the milk and salt and beat until smooth. Cover and let rise 1 hour. It will be light and fluffy. Stir well and cook. To make mixture overnight: use 1/4 cake compressed yeast instead of dry yeast and add extra 1/2 teaspoon salt.
