Best Spaghetti Sauce
Ingredients
- 1 cup sliced onions
- 2 tablespoons oil for sauteing
- 1 pound ground meat - am now using turkey
- 6 large clove garlics chopped without the green sprout
- 4 cups tomatoes - pureed, diced, whatever
- 2 cups tomato sauce
- 2/3 cup sliced mushrooms cooked - either separately or with the meat and garlic
- 1/4 cup chopped parsley - or use less dried
- 1 teaspoon dried basil
- 1 1/2 teaspoons oregano or sage (I use oregano)
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/4 teaspoon thyme
- 1 bay leaf
- 2 teaspoons Tabasco sauce (really!)
- freshly ground black pepper
Directions
If you are cooking for very tender palates, use less Tabasco, but it really does make it tasty.
In a large skillet, cook onion until almost tender. Add meat (if you are using turkey, put in 1/2 the meat and add the rest as little meatballs before serving - giving enough time for them to cook.) and garlic and brown lightly. Mushrooms may be added here, too. Add all remaining ingredients. If the tomatoes you are using make the sauce too thick to simmer, add up to a cup of water so that the sauce can simmer for an hour or two without burning. Remove the bay leaf and serve with any sort of pasta you like, or none if you are in a dieting mood. Parmesan cheese is a great addition if you aren't dairy sensitive.
