Quinoa and Wehani Rice

Ingredients

  • 1 cup quinoa, rinsed well
  • 1 cup wehani or sweet rice
  • 3 1/2 cups or more stock or water check your rice cooker directions for exact liquid amount needed

Directions

Put rinsed quinoa and rice in a rice cooker with appropriate amount of water or stock and cook on regular cycle. If you use brown sweet rice, probably use the brown rice cycle.

You can stir-fry this rice mixture with onion and garlic in olive oil. Sprinkle with some seasoning and you can top with a roast red pepper.

Another possibility: add sweetener and moist prunes or other fruit to the cooked rice for a breakfast-type meal.

Note

sweet rice can be used instead of wehani
