Strawberry-Tofu Ice Cream

Ingredients

  • 1 pound soft tofu, drained
  • 10-12 frozen, unsweetened strawberries
  • 1 cup sugar
  • 1/2 cup plain soy milk
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon vanilla extract
  • pince salt

Directions

For extra fruit flavor: fold in a cup of extra fruit after the ice cream is almost frozen.
Puree - in two batches if necessary
Freeze

1/2 cup serving: 3 grams protein; 2 grams fat; 25 grams carbohydrate
