Chicken Broth

Ingredients

  • 3 pounds chicken wings, necks, backs
  • 1 bay leaf
  • 1/2 teaspoon thyme
  • 12 peppercorns
  • 1 ribs of celery with leaves
  • 1 large onion
  • 2 in onion cloves
  • 1 chopped carrot
  • 6 sprigs parsley
  • 10 cups water
  • 1 tablespoon salt

Directions

Use at least a 4 quart kettle Simmer 2 hours uncovered Skim scum Strain with cheesecloth in sieve Can be reduced over high heat (add more salt only at the end)
