Reuben Casserole

Ingredients

  • 1 27 oz. can sauerkraut, well-drained
  • 1 large tomato, chopped
  • 1/4 cup catsup
  • 1/2 cup mayonnaise
  • 1/4 cup minced onion
  • 1/2 teaspoon caraway seeds
  • 1 12 oz. can corned beef, cubed
  • 1/2 pound shredded swiss cheese
  • 4-6 slices dark rye bread, toasted

Directions

Serves 4-6 Mix everything together except the cheese. Spoon it all into a good size baking dish - a 9" square pan is too small. Sprinkle on the cheese. Bake at 425 degrees, 20 minutes or until hot and bubbly.
