Zucchini Cheese Casserole

Ingredients

  • 3 med. zucchini, sliced
  • 1/2 cup chopped onion
  • 2 tablespoons oil
  • 1 pound lowfat cottage cheese
  • 1 teaspoon basil
  • 1/2 teaspoon oregano
  • 2 fresh tomatoes, peeled and sliced
  • 1/3 cup grated parmesan

Directions

Saute zucchini and onion in oil. Whip cottage cheese with basil and oregano in blender. Place alternating layers of zucchini, cottage cheese and tomato in 2 quart casserole. Top with parmesan. Bake at 350 degrees for 25 - 30 minutes.
