No-Grain Muffins

Ingredients
- 1 cup flaxseeds, ground
- 1/2 cup walnuts, ground
- 3/4 cup protein powder
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 4 tsp oil (or butter)
- 2 each eggs
- 2 tsp vanilla
- 2/3 cup ricotta (or cottage) cheese
- 1 zest grated from an orange
- 2/3 cup brown sugar
- 3/4 cup dried currants
- 3/4 cup shredded zucchini (or canned pumpkin)
Directions
Line muffin tin with paper muffin cups.
Mix all ingredients and bake at 350 for 20 to 25 minutes.
Note
Excellent breakfast protein and fiber.
